Aunt Judy's Baked Oatmeal

Tom and I were recently in Minnesota and had brunch with his Aunt Judy who made us this AMAZING baked oatmeal. It was by far the best breakfast we had while we were in town. Here’s my version of it - full of pecans, dried cranberries, apples, and a few other delicious goodies!

Aunt Judy's Baked Oatmeal

Serves 4-6

Aunt Judy's Baked Oatmeal
  • 2 cups oats
  • 1 tbsp flaxseed meal
  • 1 cup almond milk
  • 1 cup water
  • 2 apples, chopped
  • 1/2 cup dried cranberries
  • 1 cup pecans
  • 1/2 tsp baking powder
  • 1/4 cup maple syrup
  • 1 tsp nutmeg
  • 1 tbsp cinnamon

  • MIX

    In a small bowl, combine 1 tbsp of flax seed meal and 3 tbsp of water. This will be your egg replacement.


    In a large bowl combine the oats, almond milk, and water and stir together. Add in the flaxseed meal and water and mix. Add in the chopped apples, dried cranberries, 1/2 cup of the pecans, baking powder, maple syrup, nutmeg and cinnamon and combine. Pour the mixture into a baking dish and top with the remaining 1/2 cup of pecans.


    Bake, uncovered, at 350 degrees for 30 minutes.

    The oatmeal is super delicious right out of the oven, or you can reheat it by pouring about 1/2 a cup of additional almond milk over the top and microwaving for about a minute.
