You know those days when you just have a craving for salty, crispy, junk food? Make these chips! They're addicting, super healthy, and will satisfy any potato chip craving!

Baked Potato Chips & Onion Dip

  • 2 russet potatoes
  • 1/2 onion, diced
  • 1/4 cup chives
  • 1/2 block tofu
  • 1/2 cup Vegenaise
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 lemon, juiced
  • 2 tbsp apple cider vinegar
  • pinch of salt

Slice & Bake the Potatoes

Scrub 2 russet potatoes and slice as thinly as you can - if you have a mandolin this works great, otherwise mind your fingers and slice the potatoes into 1/8”-1/4” slices. Place the sliced potatoes on a lined baking sheet (silicon or otherwise) and bake at 400 degrees for 15 minutes. Flip the potatoes and remove any of the potato slices that are crispy on both sides. Bake another 5-15 minutes until crispy.

Make the Onion Dip

Dice 1/2 an onion and cook in a pan on your stove with about 1/4 cup of water. Once the onions are translucent and have absorbed the water, transfer to your Vitamix, food processor, or blender. Add in the chives, tofu, Vegenaise, nutritional yeast, garlic powder, onion powder, lemon juice, and apple cider vinegar and blend until smooth. Refrigerate while the potatoes finish baking.

Once the potatoes are done, transfer to a large bowl and sprinkle with a little salt. Then start dipping!
