BBQ Jackfruit Salad

Jackfruit is such an unsung hero. It has the consistency of a shredded meat without the cholesterol and is packed full of nutrients. It works perfectly in this bbq jackfruit salad!

BBQ Jackfruit Salad

  • 1/2 onion, diced
  • 1/4 cup water
  • 1 can jackfruit in brine, drained
  • 1 cup bbq sauce
  • 4 cups lettuce, chopped
  • 1 cup shredded carrots
  • 2 roma tomatoes, diced
  • 1 green bell pepper, chopped
  • 1 cucumber, chopped
  • 1 cup frozen corn, thawed
  • 4-6 radishes, sliced
  • 1 can black beans, drained & rinsed
  • pumpkin seeds
  • avocado

Cashew Cilantro Dressing Ingredients
  • 1 cup raw cashews
  • 1 small handful cilantro
  • 1/4 cup nutritional yeast
  • 2 tbsp apple cider vinegar
  • water

  • MAKE THE BBQ JACKFRUIT

    In a large pan on your stove, combine the diced onion and 1/4 cup of water and cook about 5 minutes. Add in the jackfruit and pour 1 cup of bbq sauce over the top. Cook for another 5 minutes, and then start to break up the jackfruit chunks - a potato masher works great! Continue cooking another 15 minutes. 

    CHOP

    Get chopping! Chop and combine the rest of the salad ingredients in a large bowl and toss together. 

    Make the Cashew Cilantro Dressing

    Add 1 cup of raw cashews into a measuring cup. Add enough water to reach the 1 1/2 mark on the same measuring cup. Add the cashews and water to your Vitamix, food processor blender. Add in the cilantro, nutritional yeast, and apple cider vinegar and blend until smooth. This will make about 1 1/2 cups of dressing.

    Serve

    Serve out the salad and top with bbq jackfruit, avocado, pumpkin seeds, and the cashew cilantro dressing!
