Beet Cuban Sammy

I used to love Cuban sandwiches. A grilled cheese with yumminess AND a pickle? Thankfully, because of the good people at Follow Your Heart I can make a similar plant based vegan friendly version with beets! Its insanely good and super easy to make!

Serves 4

Beet Cuban Sammy
  • 2 beets, sliced thinly
  • 4 slices Follow Your Heart Provolone Slices
  • 4 slices Follow Your Heart Smoked Gouda Slices
  • 2 pickles, sliced
  • dijon mustard
  • 2 bakery rolls

  • SLICE AND BAKE THE BEETS

    Slice 2 beets thinly and place them on a silicon baking sheet on a flat pan. Bake the sliced beets at 350 degrees for 20 minutes.

    MAKE THE SAMMIES

    Slice each roll in half and layer each side with 1 slice of Follow Your Heart Provolone and 1 slice of Follow Your Heart Smoked Gouda (that’s 4 slices per sammy). Add 2 slices of pickle per side and then add the dijon. Add in the baked beets to the middle and seal the sammy.

    PRESS THE SAMMIES

    If you have a panini press or pan this is the perfect time to use it! Otherwise you can use a skillet to press the sammies and add a heavy pan to the top to press down the bread. It should only take about 5 minutes per side, just be sure to check the toast level.

    Let them cool for a few minutes before slicing and enjoy!
