This Cabbage Roll Soup is another super quick and easy soup to put together when those chilly fall nights start to roll in. It’s full of nutritious ingredients and is incredibly satisfying!

Serves 4

Cabbage Roll Soup

  • 1 onion, chopped
  • 1 cup carrots, chopped
  • 2 cup celery, chopped
  • 1/2 cup lentils
  • 1/2 cup bulgar
  • 1 can tomato sauce
  • 8 cups vegetable broth
  • 6 cups green cabbage, chopped (1 small head)
  • salt & pepper

Combine and Cook

Chop the onions, carrots, and celery and add to a large pot on your stove. Add in the lentils, bulgar, tomato sauce, and vegetable broth and cook for about 30 minutes. After 30 minutes, add in the chopped green cabbage and cook another 15 minutes until the cabbage is soft.

Add any salt and pepper to taste per serving. This is super delicious with a large loaf of crunch bread!
