Chana Masala with Green Chutney
This is a super easy recipe you can put together on a weeknight for dinner. The spices blend together with the chickpeas making it a super filling and delicious meal, and the green chutney adds a little sweet and a little sour to balance out all the flavors!
1 onion, diced 3 cloves garlic 2" piece of ginger 2 cups vegetable broth 1 tomato, chopped 1 tsp turmeric 1 tbsp curry powder 1 tsp garam masala 1 can chickpeas, drained & rinsed 1 cup mint 1 cup cilantro 2 green onions 1 1/2 limes, juiced 2 cups brown rice
CHOP AND SIMMER
Dice the onion and add it and 2 cloves of minced garlic, 1" piece of ginger, and 1 cup of vegetable broth to a pot on your stove. Bring the broth to a gentle simmer and add in 1 chopped tomato, 1 tsp of turmeric, 1 tbsp of curry powder, 1 tsp of garam masala, 1 can of drained and rinsed chickpeas, and 1 more cup of vegetable broth and continue a slow gentle simmer.
COOK THE BROWN RICE
Cook 2 cups of brown rice on your stove top or in your rice cooker.
MAKE THE GREEN CHUTNEY
In your Vitamix, food processor, or blender, add 1 clove of garlic, 1" piece of ginger, 1 cup of mint, 1 cup of cilantro, 2 green onions, the juice of 1 1/2 limes, and a 1/2 cup of water and blend until smooth.
When the rice is done cooking serve the chana masala (chickpeas) over the rice and top with the green chutney and any additional cilantro if you'd like!
