Classic Potato Salad

This potato salad is a 'classic' version, but with no dairy or eggs. Even the most skeptical eaters will find this potato salad delicious!

Serves 4-6

Classic Potato Salad

  • 4 cups potatoes, chopped
  • 3 green onions, chopped
  • 3 stalks celery, chopped
  • 1 lemon, juiced
  • 3 dill pickles, chopped
  • 3-4 tbsp vegenaise
  • 1 tbsp yellow mustard
  • 1 tsp turmeric
  • 3 tbsp fresh parsley, chopped
  • 1 tsp paprika

BOIL THE POTATOES

Boil the potatoes until they are just done and don't get too soft.

CHOP & MIX

While the potatoes are boiling, chop the green onions, celery, and pickles, and mix together with the lemon juice, vegenaise, yellow mustard, and turmeric.

COMBINE

Once the potatoes are just tender enough (don't boil too long or you'll get mashed potatoes!) drain and rinse under cold water (or put in your refrigerator to cool).

Once cooled, mix with the remaining ingredients and top with the chopped parsley and paprkia.
