Coconut Black Beans & Rice

This recipe has it all - its creamy, its a little sweet, its a little spicy, its crunchy, its smooth. And its definitely becoming one of my weeknight staples.

Serves 4

Coconut Black Beans & Rice

  • 1/2 onion, diced
  • 2-3 cloves garlic, minced
  • 1 can lite coconut milk
  • 2 cans black beans, drained & rinsed
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1/2 - 1 whole jalapeno (optional)
  • 1 cup mango, chopped
  • 2 green onions, chopped
  • cilantro, chopped (optional)
  • 1/2 lime, juiced
  • brown rice


Combine

In a large pot on your stove, combine the onion, garlic, coconut milk, black beans, red bell pepper, and jalapeƱo. Cook on your stove for about 20 minutes until the veggies are soft. 

Cook the Brown Rice

While the beans and veggies are cooking, cook about 2 cups worth of brown rice.

Serve

To finish, add in the mango, green onions, cilantro, and lime juice at the very end and serve over the cooked brown rice.
