Couscous Cauliflower Bowl

Serves 2

Couscous Cauliflower Bowl

  • 1 head cauliflower, chopped
  • 2 russet potatoes
  • 1/2 cup couscous
  • 1 tsp curry powder
  • 1 tsp garam masala
  • 1 can chickpeas
  • 2 cups kale, chopped
  • 1/2 lemon, juiced
  • 2 tsp red wine vinegar
  • 1/2 cup shredded carrots
  • hummus

Roast the Potatoes

Slice up the potatoes into this french fry style pieces and sprinkle with 1 tsp curry powder and 1 tsp garam masala. Bake in your oven at 400 degrees for about 20 minutes until they’re slightly crispy.

Make the Couscous

Boil 1 cup of water and pour over 1/2 a cup of couscous in a small pot. Cover with the lid and let the couscous absorb the hot water. Once absorbed, mix the chickpeas, kale, lemon juice, and red wine vinegar in with the couscous.

Steam the Cauliflower

Chop the cauliflower and steam it until it is just soft.

Assemble the Bowl

Assemble each bowl with the potatoes, couscous, cauliflower and top with any hummus you’d like!
