I looooooooooooove falafel. I'm kind of obsessed with it. I started eating it so much I figured I should figure out how to make it at home and once I did, I can't believe I waited so long! Its super simple to make, crazy delicious, and as much as I love the fried version, this baked recipe is much healthier.
Makes 10 Falafels, Serves 2
- 1 can chickpeas, drained & rinsed
- 1/2 lemon, juiced
- 1 handful parsley
- 1 handful, cilantro
- 1 clove garlic
- 1 green onion
- 1 tbsp cumin
- 1 tsp salt
- 1 tsp baking powder
lettuce, chopped cucumber, sliced tomatoes, chopped red onion, sliced shredded carrots kalamata olives 2 tbsp hummus 1/2 lemon, juiced 2 tbsp water
Make the Falafel
In your Vitamix, food processor or blender, combine the drained and rinsed chickpeas, lemon juice, parsley, cilantro, garlic, onion, cumin, salt and baking powder and pulse until you have a thick consistency. You may need to use a spoon to break it up as it blends.
Roll the falafel mixture into 1” size balls, then flatten into patties. Place the patties on a lined baking sheet and bake at 400 degrees for 15 minutes, then flip and bake another 15 minutes.
Make the Salad & Dressing
Mix the salad ingredients together in another bowl and top with the falafel. Add the dressing ingredients into a container with a lid and shake until combined. Drizzle the dressing over the top and enjoy!
