One of my favorite things to eat (other than pickles) is guacamole! Guacamole can sound intimidating to make, but its SO SIMPLE. The key is to find ripe avocados that are soft to the touch. After that its just a bit of chopping and mixing and you'll be having a fiesta in no time! 



Makes About 2 Cups


  • 4 avocados
  • 1/2 tomato, chopped
  • 1/2 jalapeno, chopped
  • 1 small handfull cilantro, chopped
  • 1/4 red onion, chopped
  • 3 limes, juiced
  • sea salt, optional, to taste

Mash the Avocados

Here's how you open an avocado:

Slice the avocado in half the long way, turning the fruit as you cut into you - you can't cut all the way through it because of the large stone in the middle.

Once you've cut all along the long side in a large circle, you will be able to open up the avocado and the seed will be on one side. If your avocados are ripe, you can just pull the seed out. If they're a little unripe the seed will be a little stuck but if you squish the avocado around it the seed should come out.

Once you've popped the seed out of all four avocados, use a spoon to spoon out the yummy green inside into a bowl. Once spooned, use a fork to mash up the avocado. 

Chop and Mix

Once the avocados are mashed, chop up the remaining ingredients and mix them in with the avocados. Add the juice of 3 limes and mix thoroughly.

You can add a little sea salt to the top to taste if desired.
