Irish Cabbage Soup
So you want corned beef and cabbage, but without the beef and quicker than six to eight hours in your crock pot? MAKE THIS SOUP! It tastes exactly like corned beef & cabbage, but without the beef and only takes about 45 minutes to make!
1/2 onion, chopped 2 cups potatoes, diced 2 cups carrots or parsnips, sliced 1 turnip, peeled & diced - optional 4 cups cabbage, roughly chopped 4 cups vegetable broth 2 cups water 1 tsp black pepper 2 bay leaves 1/2 tsp yellow mustard seeds
Chop and combine everything in a large stockpot on your stove. Simmer for 30-45 minutes or until the potatoes, carrots, and turnips are soft. Remove bay leaves before eating.
