Italian Style Chopped Salad

Get chopping! This salad is super quick to throw together and delicious with a little splash of red wine vinegar and lemon juice or any kind of vinegar based dressing you like! Light and refreshing, yet filling and hearty!

Serves 4-6

Italian Style Chop Salad

  • 2 cups lettuce, chopped
  • 1 can chickpeas, drained & rinsed
  • 1 can black olives
  • 1/2 cup green onions
  • 2 tomatoes
  • 1 bell pepper
  • 1 cucumber
  • 1/4 cup fresh basil
  • 1/4 cup fresh oregano
  • 1 lemon, juiced
  • 1 tbsp red wine vinegar
  • black pepper, to taste


Chop the lettuce, green onions, tomatoes, pepper, cucumber, basil, and oregano and gently toss together.


Add the drained and rinsed chickpeas and black olives and gently mix in.

Squeeze the juice of 1 lemon over the top and 1 tbsp of red wine vinegar. Gently toss one more time and top with fresh cracked black pepper to taste. Enjoy!
