Jackfruit is a giant fruit that comes from Asia and when cooked breaks down like shredded meat. It's a little sweet, a little tangy, and makes for AMAZING shredded tacos!
1 can Young Green Jackfruit in Brine 1 15oz can tomato sauce water 1 cup onion, chopped 1 tbsp cumin 1 tbsp chili powder 1 tsp garlic powder 2 limes, juiced 2 green onions, chopped 1 cup shredded green cabbage 1 tbsp Vegenaise 8 corn tortillas 1 avocado, sliced
YOUNG GREEN JACKFRUIT IN BRINE
There are two different types of jackfruit you can buy: Jackfruit in Syrup or Jackfruit in Brine - you want Jackfruit in Brine for this recipe.
Pull out your slow cooker for this one! Drain 1 can of jackfruit and add to your slow cooker. Add in 1 15oz can of tomato sauce, then fill half that can with water and pour in as well. Add 1 cup of chopped onion, 1 tbsp cumin, 1 tbsp chili powder, 1 tsp garlic powder, and the juice of one lime. Cook on high for 6 hours, stirring occasionally.
When the jackfruit is cooked you'll be able to use a fork or a spoon to shred - just like meat!
MAKE THE SLAW
Mix 1 cup of shredded cabbage with the juice of 1 lime, 1 tbsp Vegenaise, 1 chopped green onion, and 1/2 cup chopped cilantro (optional).
Assemble the jackfruit on top of two corn tortillas. Add the slaw and additional chopped green onions and cilantro to taste. Garnish with avocado and enjoy!
