Jackfruit Tikka Masala

Trust me, you won't be able to stop eating this. It takes a few minutes of prep and the rest is done by the magic of your slow cooker!

Serves 4

Jackfruit Tikka Masala

  • 1 onion, chopped
  • 2 garlic cloves
  • 1 cup potatoes, chopped
  • 1 eggplant, peeled & chopped
  • 1 can lite coconut milk
  • 1 can crushed tomatoes
  • 1 can tomato paste
  • 1/2 lemon, juiced
  • 2 tbsp garam masala
  • 1 tbsp curry powder
  • 1 can jackfruit in brine
  • rice
  • cilantro, optional


Set it and Forget it!

Time to get your crockpot out! Combine all the ingredients except for the rice and set on high. Cook for 4 hours.

If you don’t have a crock pot, start by combine all the ingredients except for the rice in a large pot on your stove and cook on medium for about 30 minutes, stirring continuously. As the jackfruit cooks it will break down and start to shred. Continue cooking until the potatoes and eggplant are soft.

Cook the Rice and Serve

I usually only cook with brown rice, but every once in a while I love a little white basmati rice. Cook 2 cups dry rice according to the package directions in your rice cooker or stove top.

Serve the Jackfruit Tikka Masala on top of the rice and garnish with any cilantro as desired!
