Want a lasagne, but don't have an hour to make it? Make this soup! It tastes just like lasagne, but in the deliciousness of being a soup!
1 onion, chopped 1 zucchini, chopped 2 cloves garlic, minced 1 cup mushrooms, sliced 4 cups vegetable broth 1 jar pasta sauce 1/2 cup nutritional yeast 6 lasagne noodles, broken 4 cups green or red chard (or kale, or swiss chard, or spinach), chopped 1 cup basil, chopped
CHOP AND MIX
Chop the onion, zucchini, garlic, and mushrooms and add to a pot on your stove. Add in the vegetable broth and pasta sauce and heat until just simmering.
Turn down the heat and add in the nutritional yeast and 6 broken lasagne noodles.
Once the lasagne noodles are soft, add in the chard and basil and continue cooking another 5 minutes. Serve in large bowls and enjoy!
