Mushroom Philly Sammy

Sautéed mushrooms, peppers, and onions on a bed of spinach and cashew cheese spread?! Just like a traditional philly this sammy is MESSY, but oh so delicious!

Serves 4

Mushroom Philly Sammy
  • 4 cups mushrooms, sliced
  • 1 cup bell peppers, sliced
  • 1 cup onions, sliced
  • 3 cups water
  • 2 tsp corn starch
  • 1 cup cashews
  • 1 clove garlic
  • 1/3 cup nutritional yeast
  • spinach
  • 4 hoagie rolls


    Sauté the sliced mushrooms in 1 pan with 1 cup of water, and the sliced bell peppers and onions in another pan with 1 cup of water.


    In your Vitamix, food processor, or blender, combine 1 cup of cashews, 1 clove of garlic, 1/3 cup of nutritional yeast, and 1 cup of water and blend until smooth.


    Once the mushrooms are sautéed through, add 2 tsp of corn starch to thicken the sauce.

    Then on each hoagie bun, spread a layer of cashew cheese, spinach, mushrooms, and peppers and onions and get your napkins and tastebuds ready!
