This soup is so easy to make and incredibly delicious. Its perfect for those cold winter nights and comforting for those Saturdays when you just don't want to leave your house.

Mushroom & Wild Rice Soup

  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 2 bay leaves
  • 1 cup celery, chopped
  • 1 cup carrots, chopped
  • 6 cups mushrooms, sliced
  • 3 cups vegetable broth
  • 3 cups almond milk
  • 1 cup wild rice, uncooked
  • thyme, optional

Combine the Ingredients & Simmer

Combine the onion, garlic, bay leaves, celery, carrots, mushrooms, vegetable broth, and almond milk and cook for about 15 minutes. Add in the 1 cup of wild rice and cook another 30 minutes, stirring continuously. Top with any fresh thyme as desired and serve up with some warm, crunchy bread.
