Pesto Orzo & Cauliflower Rice

The combination of orzo pasta and cauliflower rice makes a super satisfying meal. Top it off with a nut free, dairy free, oil free pesto sauce and you’ve got an incredibly delicious and nutritious dinner!

Pesto Orzo & Cauliflower Rice


Serves 4

Ingredients

  • 16 oz package cauliflower rice
  • 1 onion, diced
  • 1 cup yellow squash, diced
  • 1 cup zucchini, diced
  • 1 cup mushrooms, chopped
  • 1 cup whole wheat orzo, dry

Pesto Ingredients

  • 2 cups basil
  • 2 cloves garlic
  • 1/4 cup nutritional yeast
  • 1/2 lemon, juiced
  • 1 avocado
  • 1/2 cup water

Additional Ingredients

  • red pepper flakes
  • balsamic vinegar
  • black pepper

Cook the Orzo

In a small pot on your stove, cook 1 cup of whole wheat orzo for about 9 minutes. Drain and set aside.

Make the Cauliflower Rice

Cauliflower rice is awesome - you can find it at most grocery stores in the produce section. I used one package of Cece’s Cauliflower Rice (16 oz). Add one package of cauliflower rice to a large pot with 1 cup of water and cook on medium heat. After five minutes, add in the diced onion, yellow squash, zucchini, and mushrooms and continue cooking.

Make the Pesto

Add the basil, garlic, nutritional yeast, lemon juice, avocado, and water to your Vitamix, food processor, or blender and blend until smooth.

Combine the Ingredients

Mix the cooked orzo into the cauliflower rice and pour the pesto sauce into. Continue stirring until all the ingredients are combined. Top with fresh basil and any red pepper flakes to taste! If desired, drizzle a little balsamic vinegar and crack some black pepper over the top before serving.
