Red Lentil & Pinto Bean Chili

Red lentils and pinto beans make this chili super hearty and delicious. Toss in some zucchini and red bell pepper and you've got a medley of deliciousness just waiting to be eaten!

Serves 4

Red Lentil & Pinto Bean Chili

  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup red lentils
  • 1 can pinto beans
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 2 cups water
  • 1/2 tbsp oregano
  • 2 tbsp cumin
  • 2 tbsp chili powder
  • 1 jalapeno, optional
  • cilantro, optional

Combine the ingredients & simmer

Combine the onion, garlic, red bell pepper, zucchini and 2 cups water and cook for about 10 minutes. Add in the 1 can of pinto beans, including the liquid, 1 can diced tomatoes, 1 can tomato sauce, the oregano, cumin, and chili powder, and cook for another 30 minutes, stirring continuously.

Top the chili with any optional sliced jalapeƱo and cilantro as desired and serve!
