Samosa Soup

This soup has all the delicious ingredients of a samosa, and the warm and comforting aromas of a savory soup. It looks a little complex, but its super quick and easy to put together!

Samosa Soup

    Soup Ingredients
  • 2 cups vegetable broth
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, chopped
  • 1 1/2 cups potatoes, diced
  • 1 cup frozen peas
  • 1 can chickpeas
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 1 can lite coconut milk
  • 1 cup spinach, chopped
  • 4 cups cooked rice
  • tamarind sauce, to taste
  • 1/2 cup pumpkin seeds, optional

    Green Chutney Ingredients
  • 2 cups cilantro
  • 1 cup mint
  • 1 clove garlic
  • 1 tbsp ginger, peeled
  • 1/2 lemon, juiced
  • 1/2 jalapeno
  • 2 green onions
  • 1/4 water


Chop the onion, garlic, and ginger and simmer in a 1/2 cup of vegetable broth. Once the onions and garlic are soft, add in the potatoes, peas, chickpeas, coriander, garam masala, turmeric, lite coconut milk, and the remaining 1 1/2 cups of vegetable broth. Cook on medium for about 20-25 minutes.


While the soup is cooking, combine the cilantro, mint, garlic, ginger, lemon juice, jalapeño, and green onions in your Vitamix, food processor, or blender. Carefully pour in the water while the ingredients blend so you don’t make it too thin. The chutney should be a little soupy in consistency, but not overly thin.


When the potatoes in the soup are soft, add in the chopped spinach and stir.

Add one cup of cooked rice to each bowl and pour the soup over the top. Add on a good couple teaspoons of the green chutney, and any tamarind sauce to taste.

Top with pumpkin seeds if desired!
