Summer Veg Pasta Salad

I LOVE SUMMER! And I love all the fresh produce summer brings. This pasta salad is full of tasty veggies and is a great addition to any summer BBQ that will please both vegans and non-vegans alike!

Serves 4-6

Summer Veg Pasta Salad

  • 1 cup dry elbow macaroni
  • 1 red bell pepper, chopped
  • 1/2 cucumber, chopped
  • 1 cup shredded carrots
  • 1 cup shredded purple cabbage
  • 1 cup frozen corn
  • 1 cup broccoli, chopped
  • 2 green onions, chopped
  • 4 tbsp Vegenaise
  • 2 tbsp red wine vinegar
  • salt & pepper

Boil the Pasta & Broccoli

Bring a pot of water to a boil on your stove and add in 1 cup of dry elbow macaroni and 1 cup of chopped broccoli. Cook 6-8 minutes until the pasta is cooked through. Drain under cold water.

Chop the Veg & Combine

Chop the remaining veggies and add to a large bowl.

Once the pasta and broccoli are done cooking and have been drained under cold water, add to the chopped veggies and mix together. Add in the 4 tbsp of Vegenaise, 2 tbsp of red wine vinegar, and any salt and pepper to taste. You can eat this right away or put in your refrigerator for about an hour to get extra chilled!
