Super Sloppy Vegan BBQ Sammies


Serves 6 

Super Sloppy Vegan BBQ Sammies

  • 1/2 cup lentils
  • 1/2 cup bulgar
  • 2 cups water
  • 1 onion, chopped
  • 1/2 green bell pepper, chopped
  • 1 stalk celery, chopped
  • 12oz jar BBQ sauce
  • 2 tbsp honey
  • 6 hamburger style buns
  • chopped red cabbage
  • dill pickles

Cook the Lentils & Bulgar

In a pot on your stove combine the lentils, bulgar, and water until the water is absorbed back into the lentils and bulgar and they are soft.

Cook the Veggies

In a larger pot on your stove, cook the onion, green bell pepper, and celery in 1/2 a cup of water. Once the lentils and bulgar are done cooking, add it to the large pot of veggies along with the jar of bbq sauce and 2 tbsp of honey. Continue cooking another 5 minutes until all the bbq sauce and honey has mixed in.

Assemble

Top each bun with the bbq mixture and top with shredded red cabbage and sliced pickles. The messier these are the better!
