Sweet Potato Hash Scramble
This is one of my favorite super powered breakfasts! Sweet potatoes, tofu, bell peppers, tomatoes, and onions to power you up and get your day started with a load of antioxidants, calcium, potassium, and fiber!
2 cups sweet potatoes, chopped 3 tsp chili powder 1/2 onion, chopped 1 clove garlic, minced 1 tsp cumin 1 cup water 1/2 block tofu, crumbled 1/3 cup nutritional yeast 1 cup bell peppers, chopped 1 tomato, chopped 2 green onions, chopped 1/4 cup cilantro, chopped - optional
Roast the Potatoes
Chop 2 cups of sweet potatoes and sprinkle with 1 tsp of chili powder. Bake at 400 degrees for 30 minutes.
In a large pan on your stove sauté 1/2 of a chopped onion, 1 clove of garlic, 2 tsp of chili powder, and 1 tsp cumin in 1 cup of water. Crumble in 1/2 a block of tofu and 1/4 cup of nutritional yeast. You can add more water if the tofu looks a little dry - you'll want it to soak up all the spices as it heats through.
Once the potatoes are done roasting, add to the pan with the tofu and mix together. Add in the chopped bell peppers and tomato at the last minute. Sprinkle with chopped green onions and cilantro (if you like).
