Tabbouleh

Tabbouleh is such a simple salad that packs a ton of flavor and nutrients. This is great for a pot luck or for lunches throughout the week. I also like to fill up pita bread with hummus, lettuce, and a couple scoopfuls of tabbouleh!

Serves 4-6

Tabbouleh

  • 1 cup wheat bulgar
  • 2 cups water
  • 1 handful parsley, chopped
  • 1 handful mint, chopped
  • 1 large tomato, diced
  • 1/2 cucumber, diced
  • 2 green onions, chopped
  • 1 can chickpeas, drained & rinsed
  • 1-2 lemons, juiced
  • salt & pepper

Cook the Wheat Bulgar

Combine 1 cup of wheat bulgar and 2 cups of cold water in a small pot on your stove. Cover and cook on medium high for 10-15 minutes until all the water is absorbed. Set aside to cool.

Chop & Combine

Chop and combine the parsley, mint, tomato, cucumber, and green onions. Drain and rinse 1 can of chickpeas and add to the veggies. Once the wheat bulgar is done cooking mixing in and juice up 1-2 lemons depending on your taste and any salt and pepper to bring out your favorite flavors!
