Taco Pasta Salad
Tacos - delicious. Pasta salad - delicious. Put them together - deliciousness explosion! Yeah, I'm excited about this one. Spicy, tangy, crunchy, and crazy good!
1 cup pasta, uncooked 1 bell pepper, chopped 1 can black beans, drained & rinsed 1 cup frozen corn, thawed 1 cup tomatoes, chopped 1 avocado, chopped 1/2 cup cilantro, chopped - optional 2 limes, juiced 1 tsp cumin 1 tsp chili powder 4 tbsp salsa 3 green onions, chopped tortilla chips 1 tsp hot sauce
START THE PASTA
Cook the pasta on your stove top and drain under cold water when done.
CHOP AND MIX
Chop the rest of the veggies and add to a large bowl. Mix in the lime juice, cumin, chili powder, salsa, and tapatio (or other hot sauce).
Mix in the cooled pasta and crush in a few handfuls of tortilla chips.
Eat right away or refrigerate for a few hours! Add any additional hot sauce or salsa to taste and enjoy!
