Taco Salad

  • 1 can black beans, drained & rinsed
  • 2 tomatoes, diced
  • 2 green onions, chopped
  • 1 head romaine lettuce, chopped
  • 1 can black olives, sliced
  • 1 green bell pepper, chopped
  • 1 avocado, chopped
  • 1 lime, juiced
  • 2-3 cups tortilla chips
  • 1 cup salsa
  • 1/2 cup cilantro, chopped - optional
  • Tapatio - optional
  • 1/2 cup Pumpkin Seeds

Cashew Cheese
  • 1 cup raw cashews
  • 1 clove garlic
  • 1/3 cup nutritional yeast
  • 1/2 cup water

  • CASHEW CHEESE

    In your Vitamix, food processor, or blender, combine 1 cup of raw cashews, 1 garlic clove, 1/3 cup nutritional yeast, and 1/2 a cup of water. Blend until smooth! (You can pour in more water as it blends if you need to thin out the sauce!)

    CHOP & MIX

    This is crazy easy. Chop and mix everything together. Drizzle the salsa and cashew cheese on top, squeeze on some lime juice, and add as much Tapatio as you'd like for spice!
