Serves 4-6

Thai Green Coconut Curry

  • 1 cup basil
  • 1 cup cilantro
  • 2 cloves garlic
  • 1" piece of ginger
  • 2 green onions
  • 1/2 lemon, juiced
  • 1 can lite coconut milk
  • 2 tbsp soy sauce
  • 1/2 jalapeno
  • 1 head broccoli, chopped
  • 1/2 onion, sliced
  • 1 cup mushrooms, sliced
  • 1 can baby corn, drained
  • 1 can sliced water chestnuts, drained
  • bean sprouts
  • green onions
  • cilantro
  • brown rice

Cook the Brown Rice

Cook 1 cup of dry brown rice on your stove top or in your rice cooker.

Make the Green Curry Sauce

In your Vitamix, food processor, or blender, combine the basil, cilantro, garlic, ginger, green onions, lemon juice, coconut milk, soy sauce, and jalapeño and blend until smooth.

Sauté the Veggies

In a large pot on your stove, combine the chopped broccoli, sliced onion, red bell pepper, zucchini, mushrooms, baby corn, and water chestnuts with about 1/2 a cup of water and cook for about 10 minutes until the veggies are just soft.

Add the green curry sauce to the veggies and cook another 10 minutes. When the rice is done cooking, serve the veggies and curry sauce over the rice and top with any additional green onions, cilantro, and bean sprouts.
