The Best Vegan Breakfast Burrito

Welcome to my favorite breakfast! These burritos are quick to put together with minimal prep work and they're always delicious! Let's be honest here and just use the massive flour tortillas, they hold the filling together better than any whole wheat or gluten free wrap I've tried.

Serves 4

The Best Vegan Breakfast Burrito

  • 1 onion, diced
  • 1 tomato, chopped
  • 1 zucchini, chopped
  • 2 cups spinach or kale, chopped
  • 1 cup water
  • 1/2 block tofu
  • 1 tbsp garlic powder
  • 1/4 cup nutritional yeast
  • 1 tsp turmeric
  • 4 large tortillas
  • 1 large potato
  • salsa
  • cashew cheese
  • hot sauce
  • avocado or guacamole
  • cilantro - optional
Cashew Cheese Ingredients
  • 1 cup raw, unsalted cashews
  • 1/2 cup water
  • 1 clove garlic
  • 1/3 cup nutritional yeast
  • 2 tbsp apple cider vinegar

  • Roast the Potatoes

    Chop 1 large potato into chunks or half moon shapes and bake on a silicon baking mat on a baking sheet in your oven at 400 degrees for 25 minutes.

    Make the Scrambled Tofu

    In a large pan on your stove, combine the onion, tomato, zucchini, 1 cup of chopped kale or spinach, and 1/2 cup of water and cook about 5 minutes. Add the 1/2 block of tofu and mash until it is crumbly. Add in the 1 tbsp garlic powder, 1/4 cup of nutritional yeast, and 1 tsp of turmeric. Mix together and cook another five minutes. Make sure to cook out as much of the water as possible.

    Make the Cashew Cheese

    In your Vitamix, food processor, or blender, combine the cashews, water, garlic, nutritional yeast, and apple cider vinegar and blend until smooth.

    Assemble

    Warm each tortilla about 20 seconds in a microwave to soften. Add a scoop of cashew cheese to the tortilla and spread out evenly. Top with kale or spinach, roasted potatoes, scrambled tofu, salsa, and any hot sauce, avocado or guacamole and cilantro as desired and roll up into a burrito.

    If you like a crispy shell you can either bake your burrito in your oven,or press it in a panini pan or press totoast!
