Serves 2-4

Ultimate Vegan Nachos

  • tortilla chips
  • 1 can black beans, drained & rinsed
  • 1/2 cup pico de gallo
  • 1/2 cup guacamole
  • 1 can sliced black olives
  • 1/2 cup cilantro, chopped
  • 2 green onions, chopped
  • 1/2 jalapeno, sliced
  • 1 bell pepper, sliced
  • 1/2 lime, juiced
  • hot sauce
  • 1/4 cup pumpkin seeds
  • 1/2 head romaine, chopped

Make the Nacho Cheese Sauce

Fill a 1 cup measuring cup with raw, unsalted cashews then fill with water to cover the cashews. Let sit for about 15 minutes while you chop the ingredients for the nachos.

Add the cashews and water to your Vitamix, food processor or blender. Add in 1 can of white beans including the liquid. Add in the nutritional yeast, chili powder, cumin and hot sauce and blend until smooth. Add more water as the sauce blends to thin to your desired consistency.

Bake the Nachos

Layer a good pile of tortilla chips on a silicon baking sheet on a baking tray. Spread the black beans over the top of the chips as well as the sliced bell pepper and jalapeƱo. Pour half of the nacho cheese sauce over all of the chips and bake at 400 degrees for 10-15 minutes until the chips get nice and toasty.

When done baking, top with pico de gallo, guacamole, sliced black olives, cilantro, green onions, pumpkin seeds, and chopped romaine. Squeeze half a lime over the top and drizzle on any additional hot sauce and more nacho cheese as desired!
