Korma is one of my FAVORITE things to get when I go out for Indian food. It's a little spicy, saucy, and so delicious. I've made a new version with a few substitutes that makes this a super tasty dinner on those cold winter nights!
1 onion, chopped 2 cloves garlic, minced 1" piece ginger, minced 1 tbsp coriander 1 tbsp curry powder 1 tsp garam masala 1 tsp turmeric 1 pinch cayenne pepper 1/2 lemon, juiced 2 cups vegetable broth 1 can lite coconut milk 2 golden potatoes, chopped 1 cup cauliflower, chopped 1 red bell pepper, chopped 2 cups meatless meatballs (like Trader Joe's, or IKEA, or Gardein) 1 cup frozen peas 1 cup spinach, chopped brown rice
Combine the Onion, Garlic, Ginger & Spices
Combine the chopped onion, garlic, ginger, and all the spices in a large pot. Mix together.
Add in the lemon juice, vegetable broth, and coconut milk and bring to a gentle simmer. Once simmering, add in the potatoes, cauliflower, and red bell pepper. Continue cooking until the potatoes and cauliflower are soft.
Serve over brown rice and enjoy!
