Vegan Pasta & Veg Balls

There's just something so comforting about this pasta and it's crazy easy to make. I also love veggie balls and my favorite actually come from IKEA! They do not not contain ingredients with allergens such as gluten, soy, nut, egg or lactose so as many people as possible can enjoy them and you can actually SEE the vegetables in them! If you don't have access to an IKEA Gardein makes a version found in lots of grocery stores, as well as Amy's Kitchen, and Trader Joe's.

Serves 4-6

Vegan Pasta & Veg Balls

  • 1 red onion, chopped
  • 3 garlic cloves, minced
  • 4 roma tomatoes, choped
  • 1/2 cup water
  • 1 jar pasta sauce
  • 2 cups pasta
  • 1/2 bag IKEA veg balls

Combine

In a large pot on your stove, combine the onion, garlic, roma tomatoes and water and cook for about 15 minutes. Add in the jar of pasta sauce and cook another 20 minutes.

Bake the Veg Balls

Bake the veg balls according to the package directions. I baked the IKEA veg balls at 350 for 30 minutes (an additional 10 minutes over the package directions.)

Cook the Pasta

While the veg balls are baking, boil 2 cups of pasta. When done, add the veg balls and pasta to the sauce and gently mix together. Sprinkle on any additional dried basil, oregano, and red pepper flakes to taste!
