Vegan Waldorf Salad

I love this salad! Its perfect for a hot day - cool and refreshing, crunchy and juicy, and includes all your favorites - apples, grapes, celery, and walnuts. You can serve it over lettuce or spinach to fill it out, or wrap it up in a tortilla for a delicious lunch!

Vegan Waldorf Salad

Serves 4-6

Waldorf Salad

  • 2 cups walnuts, chopped
  • 2 cups celery, chopped
  • 1 cup grapes, sliced in half
  • 2 apples, chopped
  • 3 green onions, chopped
  • 2 lemons, juiced
  • 3 tbsp Vegenaise
  • 1 tbsp dijon mustard
  • 3-4 cups lettuce or spinach
  • 1 tbsp dill


Chop all the ingredients and mix together. Add in the juice of 2 lemons, 1 tbsp of dijon, and 3 kitchen size tablespoons of Vegenaise (I think they're bigger than measuring spoon tablespoons). Mix together and chill for about 30 minutes.

Serve over a bed of lettuce or spinach, or wrap up in a tortilla.
