Veggie Lo Mein
You can easily put this together in under 30 minutes - you'll want the veggies to be slightly crunchy so as the noodles cook you'll be working on the veggies - just a few minutes of chopping and cooking and you'll have your own Chinese take out without all the extra fat, sugar, and salt!
1 pkg lo mein or spaghetti noodles 1 red onion, chopped 4 carrots, peeled & chopped 4 celery stalks, peeled & chopped 4 cups broccoli, chopped 1 cup sugar snap peas 2 cloves garlic, minced 1 tbsp fresh ginger, peeled & minced 1 cup teriyaki 1/4 cup low sodium soy sauce
BOIL THE NOODLES
Cook 1 package of either lo mein or spaghetti noodles.
In a large pot on your stove, combine the rest of the ingredients and heat on medium high, stirring continuously.
Once the noodles are done cooking, drain and rinse and toss together with the veggies. Top with any additional teriyaki, soy sauce, or sriracha to taste!
