Winter Lasagne Soup

This soup is so easy to make and incredibly delicious. Its perfect for those cold winter nights and comforting for those Saturdays when you just don't want to leave your house.

Winter Lasagne Soup

  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups mushrooms, sliced
  • 4 cups vegetable broth
  • 2 cups almond milk
  • 2 cups kale, chopped
  • 6 broken lasagne noodles
  • 1/2 cup nutritional yeast
  • 1 cup fresh basil
  • 1 cup frozen peas

Cook the Onion, Garlic, & Mushrooms

In a large pot on your stove, cook the onion and garlic in 1/2 a cup of the vegetable broth. After about 5 minutes, add in the mushrooms and continue cooking until soft.

Simmer

Add in the remaining vegetable broth, almond milk, 2 cups chopped kale, 6 broken lasagne noodles, 1/2 cup nutritional yeast, and 1 cup basil and cook for about 20 minutes until the lasagne noodles are soft. At the very end, add in the frozen peas and cook another few minutes until they are warmed through. Top with any salt and pepper to taste!
